Tequila!

Tequila Day!!


Many people do not even remember experiencing Tequila after that first "blackout", while others cannot even pronounce the word without getting the dry heaves.

For those of us Professionals, this ancient Aztec elixir is truly a gift from the gods.

In Mexico, the traditional way to drink Tequila is straight, and, much like the Mexicans, the true Professional is a purist and eschews lime and salt as barbaric customs.


However, this is not to "poo-poo" other traditional ways to enjoy Tequila. In some regions of Mexico, it is popular to drink fine Tequila with a side of Sangrita, a sweet, sour and spicy drink typically made from orange juice, grenadine (or tomato juice), and hot chillies. Equal-sized shots of Tequila and Sangrita are sipped alternately, without salt or lime. Another popular drink in Mexico is the "Bandera", or Flag in Spanish, which, shockingly, is named after the colors in the Flag of Mexico. It consists of three separate shot glasses, filled with Lime Juice (for the green), white Tequila, and Sangrita (for the red). They can be sipped individually or drunk as straight shots.

These are the only options that the true Tequila Professional will allow.


Outside of Mexico, a single shot of tequila is often served with salt and a slice of lime. This is called "tequila cruda" and is sometimes referred to as "training wheels". For obvious reasons, this method is relegated for the antics of fraternity parties, "Spring Break"-ers, and You-Tube enthusiasts.

For those not as robust as the ancient Aztecs, there are many Tequila based cocktails that are very refreshing; the Margarita and Tequila Sunrise are two prime examples.

Personally, I would go with something more exotic.

The Classic Matador



INGREDIENTS

  • 1 1/2 oz. (44 ml.) Tequila Blanca, a good mid-grade "Gold" is wonderful
  • 1 1/2 oz. (44 ml.) Pineapple Juice
  • 1/2 oz. (14.8 ml.) Lime Juice
  • 1 teaspoon Simple Syrup

TECHNIQUE

Place all of the Ingredients into a Cocktail Shaker with ice. Shake to a good Mariachi. Pour into a chilled Martini glass or Champagne flute. Garnish with a wedge of fresh Pineapple.

Enjoy on the veranda while overlooking the ocean.

NOTE : A Simple Syrup can be made by combining equal amounts of white cane sugar and boiling water. Mix together and let cool to room temperature
